Origin: Umbria region
Description: The fresh summer truffle (tuber aestivum vitt.) also known in Italy as the Scorzone truffle is one of the many varieties of edible truffles. Its appearance is very characteristic as it has a thick and irregular rind (also called peridium). The color of the rind goes from very dark brown to deep black. Inside it presents a gleba whose color goes from white to ocher and hazelnut depending on the level of ripeness and the area of origin.
Harvesting: In Umbria region the harvesting period of the Summer Truffle goes from May 1st till August 31.
Packaging and Shipping: We ship the fresh truffle in a cooled polystyrene box in order to guarantee the best storage of the product during shipment.

Storage: Wrap the truffles one by one in the kitchen paper and put them in a plastic or glass container. Store them in the lowest part of the fridge at 0°-4°C for a maximum of 5 days.
Use: The fresh truffles can be prepared in different ways. Truffles can be grated to obtain a sauce, or sliced on the dishes.
Notes: The fresh truffles are sold washed, nevertheless, we advice to wash and/or brush them before use. It is of no concern to find slightly white spots on the surface of the fresh truffle, wash to remove.
