MONTEFALCO SAGRANTINO PASSITO DOCG 2014 has the following characteristics:
PRODUCTION TECHNIQUE:
The handpicked grapes are carefully selected, placed in cases and transported to the winery straight away, where they are set on trellises to dry naturally. After two or three months, the grapes are destemmed, the must is made and the natural fermentation proceeds at a controlled temperature with repeated pumping. Once the maceration of the grape skins is complete, the racking takes place and then the wine is aged in small French wooden barrels for approximately 24 months. Finally, the wine is bottled and left for 7-8 months before being put on the market.
